We've hopped on a joint venture with the Eden Project to create this delicious, summery and sustainably made cake.
Made with fluffy polenta sponge, juicy zucchini and lime zest. We've taken it up a notch with refreshing rosemary, lovingly grown at the Eden Project in Cornwall. To top it all off, we've added a zingy lime icing for that perfect finishing touch.
The refreshing and light cake has been developed by the Exploding Bakery to celebrate The Big Lunch - an idea from the Eden Project which brings millions of people together to share friendship, food and fun in their communities kicking off the Month of Community every year in June.
The idea behind the recipe is to keep the ingredients and the cost accessible for every household income. With the rising cost of living, this cake could easily be whipped up at home by using leftover ingredients from the fridge.
With sustainability and inclusion at the heart our new partnership, 10p from each slice to be donated to support Eden Project's work with nature and communities.
