How to Treat Your Cake Right (So It Treats You Back)
We get it, your cake counter is the heart of your café. It’s what catches the eye, tempts the hungry, and keeps regulars coming back for 'just one more slice'. But even the most glorious bakes need a bit of TLC to look and taste their best.
Here’s how to show our cakes a little love, so they can do the heavy lifting for your sales.
1. Chill Out (Overnight Only)
Once your cakes are defrosted, they’re good for at least 3 days. But overnight? They need a nap. Pop them in the fridge, in a sealed container at the end of the day. It keeps them fresher, tastier, and looking less like they’ve done a shift in a sauna. Don’t worry though. If you’re storing and displaying properly, it won’t hang around that long anyway. These cakes sell themselves.
Let slices come to room temperature before serving as no one likes a cold cake. It also lets those natural buttery, sticky, zingy flavours come through loud and clear.
2. Keep It Covered
During the day, if you can, cover your cakes with a cloche as it keeps them from drying out, getting poked, or absorbing every smell from the flat whites next door. A little shield goes a long way.
If you don't have a cloche, we recommend displaying the amount of slices you're likely to sell throughout the day and keep the rest of the cake in the fridge.

4. Mix It Up And Make It Pop
Your cake counter should be a feast for the eyes. Rather than have your cakes sit like ducks in a row, try displaying them at different levels.
Contrast colours, textures, and flavours to draw people in. A rich dark brownie next to a zesty lemon loaf? Yes. A nutty number sat beside something fruity and pink? Perfect.

Dressing up your cake with little finishing touches makes all the difference. Adding decorative fresh fruit on top of a brownie, a dollop of mascarpone on a lemon polenta or coconut yoghurt on the vegan banana bread will make your cakes fly off the shelf.

Bonus Tip: The Slice Shuffle
Take out what you need. Have some slices left over from the day before? Rotate your stock smartly. Put today’s fresh slices at the back, yesterday’s at the front.
