When Sustainability Meets Sweetness

The Eden Project’s  commitment to sustainability, community, and education aligns perfectly with our ethos at The Exploding Bakery. So, when the chance arose to bake up something extraordinary together, we couldn’t resist. And this is how  the Zucchini, Lime, and Rosemary Cake came to be.

Together, between the Exploding Bakery and The Eden Project,  we’ve launched a new,  ‘Zucchini, Lime and Rosemary’ cake. This was a great opportunity for us to join forces to explore how we can further improve sustainability and create more planet friendly products.

A Blooming Partnership for The Big Lunch

The Eden Project organises a huge, annual get together called ‘The Big Lunch’.

The Big Lunch is the UK’s annual get-together for neighbours and communities, with millions of people coming together for a few hours of friendship, food and fun. It connects people and encourages friendlier, safer communities where people start to share more – conversations, ideas, skills, resources and friendship.

It was our mission to create a cake to celebrate the 2024 Big Lunch event.  We were given a task to make the cake sustainable and affordable for every household. Zucchini was a great choice for the cake as it’s something that can easily be grown by everyone in their gardens or balconies during the summer but can also be used up as ‘leftover food’.

The Cake: Zucchini, Lime and Rosemary 

Now, onto the star of the show – the Zucchini, Lime, and Rosemary Cake. This isn’t just any cake; it’s a celebration of vibrant flavors and true ingredients. Here’s what makes this cake so special:

Zucchini: Often overlooked in the world of sweets, zucchini brings moisture and a subtle earthiness to the cake. It’s like adding a touch of garden goodness to every slice.

Lime: What’s a cake without a bit of zing? The lime adds a refreshing citrus note that cuts through the richness, leaving a lingering tang that keeps you coming back for more. We've also added lime juice in the delicious icing on top.

Rosemary: The unexpected ingredient! We’ve used rosemary grown at the Eden Project’s ‘Growing Point,’ a geothermal plant nursery that cultivates herbs and vegetables on the Eden estate. This rosemary supplies food for the thousands of visitors who come to Eden each year, and now, it adds a delicate, aromatic warmth to our cake. It’s the herb that keeps on giving, adding complexity and a hint of the Mediterranean to our Devon-inspired creation.

Dairy Free: What’s more, this cake is made without dairy so it is an excellent choice for those who avoid milk products. 

 

Baking with a Purpose

This collaboration isn’t just about creating delicious cakes; it’s about baking with a purpose. Both The Exploding Bakery and The Eden Project are committed to promoting sustainability and environmental consciousness. By choosing locally sourced ingredients and reducing food miles, we’re doing our bit to support the planet – one slice at a time.

This is why we’re donating 10pm from every slice sold to Eden Project’s The Big Lunch.
