Exploding Bakery Cake Drops: Brown Sugar Apple Cake
After the summer we just had, we half expected the apple trees to be a bit sulky about the whole thing. But no. They’ve gone absolutely feral, chucking out fruit faster than we can sensibly deal with them.
So we’ve done the only logical thing and turned them apples into cake.

Meet our latest limited edition Cake Drop: Brown Sugar Apple Cake.
A rich, deeply apple-forward cake made with caramelised apples, dark brown sugar and a little apple cider vinegar to keep things bright. It’s finished with cinnamon brown sugar frosting, because once you’ve gone this far into autumn, you may as well pull the big jumper on properly.
The Apple Situation
This isn’t a whisper of apple somewhere in the background.
The apples are cooked down until soft, sticky and properly caramelised, bringing that rounded, almost toffee-like sweetness that only happens when fruit gets a bit of heat and a bit of patience.
Dark brown sugar adds depth, warmth and a gentle molasses note, making the whole cake feel rich without tipping into heavy. Then the apple cider vinegar comes in and gives it a little lift, sharpening the edges just enough so every bite still feels bright.

The Good Kind of Sticky
Some cakes are light, delicate and floaty.
This is not one of them.
Brown Sugar Apple Cake is moist, rich and baked right to the edge of caramelised glory. The crumb is soft and full, the flavour is deep, and the whole thing has that proper autumn feeling without getting too cosy-candle about it.
The cinnamon brown sugar frosting brings everything together: warm spice, soft sweetness and just enough frosting to make it feel like a treat without burying the cake underneath a sugary duvet.
Why We Love This Cake
Apples are one of those ingredients that can be a bit too well behaved. Nice enough, but sometimes left to bob around in the background while cinnamon does all the shouting.
We wanted this cake to put apple properly at the front.
The caramelised fruit gives it body. The brown sugar gives it depth. The cider vinegar keeps it lively. The frosting gives it a little bakery swagger.
It’s comforting, but not boring. Seasonal, but not predictable. The sort of cake that sits very happily next to a coffee and makes you quietly annoyed you only bought one slice.
