This particular lot is an extended fermentation natural which means that it’s processed as a natural but the fermentation process is allowed to continue for a longer period of time. The word “confite” means candy in Spanish and refers how the coffee looks wrapped and tied up in plastic and rope whilst it’s left to ferment but also to how the flavour profile, sweet and candy-like.
This coffees is a Catuai grown at about 1600 meters above sea level picked between January and March 2021. The processing is natural and drying will have been a combination of patio, raised beds and guardiola.
