We hit up our friends at the Eden Project and decided to co-create a sustainably made, dairy free cake that would be easy to make at home to try and stop unnecessary food waste. The result it 'Zucchini, Lime and Rosemary Cake'.

The deliciously light and moreish cake has been developed by the Exploding Bakery team to celebrate The Big Lunch - an idea from the Eden Project which brings millions of people together to share
friendship, food and fun in their communities kicking off the Month of Community every year in June. The idea behind the recipe is to keep the ingredients and the cost accessible for every household income. With the rising cost of living, this cake could be easily whipped up at home by using leftover ingredients from the fridge.

With sustainability and inclusion at the heart of their new partnership, Exploding Bakery has made this cake inspired by Eden Project’s charitable impact and mission, with 10p from each slice to be donated to support their work with nature and communities.
